WACKY PINEAPPLE CAKE
This sweet cake is a great treat for dessert or breakfast. Looks cool too!
Note: This recipe makes two round layers and enough icing for both.

CAKE:
2 cups flour
2 tsp. baking soda
1 large can crushed pineapple {not drained}
1¾ cups sugar
1 tsp. vanilla
flour and oil for greasing pans

ICING:
1 small can evaporated milk
½ cup margarine
¾ cup icing sugar
Few drops of vanilla
1 small can crushed pineapple, drained

· Mix all cake ingredients together & pour into large greased & floured liner pan.
· Bake in Dutch Oven for 35 minutes at 350C degrees.
· To make icing, boil all ingredients except pineapple 3 minutes; let cool.
· When cake is baked & slightly cooled, punch holes in cake & pour icing over cake.
· Decorate top of cake with small can of crushed pineapple.

WHEAT & GLUTEN FREE TROPICAL CEREAL BARS

Ingredients
* 125g butter
* ¼ cup honey
* ¼ cup sugar
* 4 cups Healtheries Simple Tropical Light Cereal
* ½ cup sliced almonds, toasted (optional)

Method
# Combine the butter, honey and sugar in a small saucepan.
# Bring to the boil and then cook over medium heat for 5 minutes.
# Place the cereal and almonds into a large bowl. Pour the honey mixture over the cereal. Mix well.
# Press the mixture firmly into a 27cm x 18cm greased slice tin. Refrigerate until firm.
# Cut into bars. Store in the refrigerator.
Makes approx 20 bars.
