BANANA BUCKWHEAT PANCAKES

Ingredients
1/4 cup Kialla Buckwheat Flour
2 eggs
3/4 cup milk or butter milk
1 tablespoon lemon juice
1 ripe Cavendish banana

Method Blend all ingredients until they form a smooth batter. Cover and let stand for 30 minutes. Pour 2-3 tablespoonfuls of batter onto a heated, oiled heavy-based pan or griddle. Cook until lightly browned underneath; turn and brown other side. Repeat process with remaining batter. Fold pancakes and serve with orange sauce.*

* ORANGE SAUCE
Ingredients
1 cup orange juice preferably fresh
1/4 cup sugar
30g butter
1 tablespoon cornflour
1 tablespoon water

Method Melt butter in a saucepan; add sugar and stir over low heat for about 3 minutes. Add orange juice and stir constantly until mixture is smooth. Blend water and cornflour and stir into orange mixture. Keep stirring until sauce boils and thickens

BANANA BREAD

BANANA BREAD
Ingredients:
2 eggs, well beaten
2 cups flour
3 ripe bananas, well mashed
1 tsp soda bicarb
pinch of salt
¾ cup sugar
butter for greasing the loaf pan
chocolate chips, walnuts (optional)

Preheat oven to 350 degrees. Grease loaf pan.
Mix bananas and eggs together in a large bowl, stir in the flour, sugar, salt and baking soda.
Add choc chips or walnuts and blend.
Put the batter in the pan and bake for 1 hour.
Remove from pan to a rack. Serve still warm or cooled.
