PASTA WITH GREEN BEAN & RICOTTA SAUCE
serves 4
440g can sliced green beans, drained
500g short pasta (bow ties if liked)
2 cloves garlic, crushed
200g can pink salmon?, reserve 1/4 cup liquid?
2 Tab lemon juice
1 cup fresh ricotta cheese
1 cup grated parmesan or cheddar cheese
1/2 cup fresh basil, chopped
s & p
Cook pasta. Heat beans in frying pan, add garlic, salmon liquid, lemon juice & simmer 2-3 minutes.
Add salmon, ricotta, parmesan, basil, s&p to taste. Pour over pasta and serve.

PROPER PLUM CAKE
This is a really tasty plum cake, with the plums from our tree, and I am eating it for breakfast. The recipe is very easy.
1 cup sugar (or just a little zylitol instead – if using fruit yoghurt, won’t need any!)
2 eggs
3/4 cups oil
5 Tabs cold water

1 3/4 cups flour
3 tsp baking powder
1/4 tsp salt

1 tsp vanilla
*
2 cups plums, sliced, or halved or whatever
*
extra sugar and some cinnamon
1) Mix together the first four ingredients in a small bowl.
Mix together next three ingredients in a bigger bowl.
Add the wet to the dry, mix, and add vanilla.
2) spread half of mixture on the bottom of a 9×9 inch, oiled, pan.
3) Arrange the plums, cut side up if you can, on the mixture.
Sprinkle with two tablespoons sugar, and half a teaspoon cinnamon.
4) Spread remaining batter on top of plums.
5) Top with more cinnamon sugar if you like.
6) Bake at 350C (180C) for about an hour.
NOTE: I used only 1 egg but added a small carton berry yoghurt
