BASIC HUNGARIAN GOULASH (with turnips & mashed potato balls)

serves 6-8

1 kg veal, cubed
bacon fat
4 onions, sliced
750ml brown stock
2 cups mashed potato
flour
12 small onions (whole)
1c each of diced turnips & carrots

Fry veal in fat with sliced onion until brown. Place in casserole, cover with stock, season and cover. Cook in mod oven for 1.5 hours.
Shape potato into balls with enough flour to bind. Brown the balls and rest of vegies.
Add to casserole and cook another 30-45 mins till all are tender. Thicken before serving.

GOULASH CONTINENTALE (spaghetti mince)

1 packet spaghetti
1 T butter
750g minced beef
2 cl garlic
2 tsp olive oil
salt
1 large tin tomato soup
1/2 tsp herbs
1 dess Worcestershire sauce
a little tomato sauce & cayenne
1/2c grated cheese

Cook spaghetti and drain. Fry butter, mince, garlic, oil & salt until brown.
Add soup plus 1/2 tin water.
Add spaghetti, herbs, W, tom.sauce and cayenne.
Stir in cheese or use as a garnish.

NOTE:  has a better flavour if made the day before use.
