MALT LOAF

Makes one 750g loaf)

2 cups wholemeal SR flour
125g mixed dried fruit
1/2 pint (236.58 ml or 1 cup) milk
1 Tab treacle
2 Tab malt extract or honey
1 cup wheatgerm
pinch salt
1/4 cup raw sugar

Add fruit to dry ingredients. In saucepan gently warm liquids on a low heat to blend them.
Make a well in the dry bowl and add liquid. Stir well, beat 1 minute.
Put in greased loaf tin in a moderate oven 180 degrees C for 1  1/4 hours.

MALT BREAD

12 oz  (340g or 3 cups) SR flour
250g sultanas
3 oz (85g (< 1/2 cup) brown sugar
2 dess. each of pure malt extract and golden syrup
1 dess. of dark treacle
1 egg
1/4 pint (142ml or 1/2 cup) milk
knob margarine

1.Sift flour, add sultanas. In saucepan warm sugar, malt, syrup, treacle & margarine (do not boil). Remove from heat.
2.Beat egg into milk and add to saucepan. Cool a bit and mix well.
3. Pour egg mixture into flour and sultanas and mix well.
4. Cook in a greased and lined tin 25cm x 17.78cm x 5.08cm and cook 1 hour.
