CHUNKY FRESH MANGO CAKE (Taste of Home)

This cake is delicious;  sweet and moist with slightly crisp edges – best to double it.
Serves 4

Ingredients

  • 1/2 cup sugar
  • 1/3 cup canola oil
  • 1 large egg, room temperature
  • 1/2 cup plus 2 Tabs plain flour
  • 3/4 teaspoon BP
  • 1/4 teaspoon salt
    1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 3/4 cup chopped peeled mango
  • 1/4 cup chopped pecans
  • Optional: icing sugar and whipped topping as shown
  1. In a small bowl beat sugar, oil & egg until well blended. In another bowl combine the flour, BP, salt, cinnamon and nutmeg; gradually beat into sugar mixture and mix well.
    Fold in mango and pecans.
  2. Transfer to a greased 6-in. round baking pan. Bake at 190 C° for 25-30 minutes or until a toothpick in the centre comes out clean. Cool for 10 minutes before removing to a wire rack to cool completely.
  3. Garnish with icing sugar and whipped topping if desired.
