CHUNKY FRESH MANGO CAKE (Taste of Home)
This cake is delicious; sweet and moist with slightly crisp edges – best to double it.
Serves 4
Ingredients
- 1/2 cup sugar
- 1/3 cup canola oil
- 1 large egg, room temperature
- 1/2 cup plus 2 Tabs plain flour
- 3/4 teaspoon BP
- 1/4 teaspoon salt
1/4 teaspoon ground cinnamon - 1/8 teaspoon ground nutmeg
- 3/4 cup chopped peeled mango
- 1/4 cup chopped pecans
- Optional: icing sugar and whipped topping as shown
- In a small bowl beat sugar, oil & egg until well blended. In another bowl combine the flour, BP, salt, cinnamon and nutmeg; gradually beat into sugar mixture and mix well.
Fold in mango and pecans. - Transfer to a greased 6-in. round baking pan. Bake at 190 C° for 25-30 minutes or until a toothpick in the centre comes out clean. Cool for 10 minutes before removing to a wire rack to cool completely.
- Garnish with icing sugar and whipped topping if desired.
