CHRISTMAS PUDDING

1/2 lb butter
1/2 lb brown sugar
1/4 lb raisins
3/4 lb sultanas
4 oz candied peel
6 oz breadcrumbs
6 oz SR flour
2  1/2 oz almonds
1/2 grated nutmeg
1/8 tsp ground ginger, allspice & cinnamon
1 tsp salt
4 eggs
2 Tab brandy
1/2 cup milk

Beat butter & sugar to a cream. Add eggs, then dry ingredients and milk, and then the brandy.
Steam for 7 hours

NOTE:  We think she added whole almonds after it was cooked, so they didn’t soften.

PIKELETS

1 cup SR flour
pinch salt
1/4 tsp bicarb soda
2 tblespoon sugar
1 egg
1/2 cup sour milk or add 1 teaspn vinegar to fresh milk
dsp butter (melted)

Sift dry ingredients,  add sugar, egg,  milk and butter, beating until smooth and thoroughly mixed. Drop dspns into electric frypan pre-heated to 380 degrees and cook until bubbly & brown and
underneath turned to brown. Spread with butter.
