APPLE CRUMBLE

4 large green apples, peeled & sliced
1 Tab soft brown sugar
2 Tab golden syrup
2 Tab lemon juice
TOPPING:
3/4 cup SR
1/2 cup each of dess. coconut, rolled oats, soft brown sugar
100g butter

Brush a shallow 6-cup capacity oven dish with melted butter.

Place apples, sugar, golden syrup & lemon juice in a large pan: cover with a tight fitting lid & cook over low heat for 10 mins or until apples have softened. Spoon apple mixt into oven dish. Preheat to mod 180 degrees C.

MAKE TOPPING:
In a bowl combine flour, oats & sugar and mix well. Make a well in the centre.
Melt butter and pour into bowl with dry ingredients and mix to form a crumble.
Scatter crumble mixture over apples.

Bake for 30 mins or until golden. Serve with ice-cream and or cream.

EASY APPLE ROCKCAKES

1 cup SR
1 cup wholemeal SR
1 tsp mixed spice
1/4 cup sugar
1/2 cup sultanas
2 Tab mixed peel
3/4 cup skim milk
2 Tab veg oil
1 egg
1 Granny Smith apple, grated

Combine flours, spice, sugar, sultanas & peel.
Mix milk, oil, egg &apple and stir into dry ingredients.

Spoon heaped Tabs of mixture onto greased baking tray and bake at 180 degrees C for 20-25 mins or until cooked.
