HEALTHY GF Banana Muffins

1 orange, juiced & grated
1/2 cup currants
3 ripe bananas
1/2 cup Coconut Flour
1/4 cup Arrowroot
1 Tab olive oil
4 eggs
1/2 tsp natural vanilla extract
pinch salt
2 tsps mixed spice
1 Tab honey
1 tsp bicarb
SYRUP INGREDIENTS:
1/2 orange, juiced
1 Tab honey

1.Preheat oven to 175C. Grease a 12 hole muffin tray.

2.Place orange juice & currants in a small saucepan. Bring to a gentle boil and reduce to a simmer. Cover and leave for 5 minutes.
3.Place bananas into food processor:  pulse until smooth. Add orange zest, coconut flour and arrowroot. Pulse to combine. Add the eggs, vanilla, salt, mixed spice and oil. Pulse to combine.
4.Add honey and bicarb to the currant mixture, stir to combine. Add this to the cake batter. Combine. Spoon evenly into your muffin tray and bake for 25 minutes.
5.SYRUP: Bring the juice and honey to the boil. Turn off the heat. Spoon over hot muffins and leave to cool.

GF Chick Pea Flour Choc Chip Cookies

2 cups McKenzie’s Natural Whole Oats
3/4 cup McKenzie’s Chick Pea Flour
2/3 cup brown sugar
1 tsp Ground Cinnamon
1/2 tsp Bi-Carb
1/4 tsp Sea Salt
1 medium banana, very ripe & mashed
1/3 cup coconut oil (warmed in microwave until liquid)
1 tsp vanilla essence
1/4 cup non-fat plain Greek yoghurt
1/3 cup Californian Walnuts, chopped
1/2 cup chocolate chips

1.Preheat oven to 180 degrees C. Line baking trays with baking paper.

2. In a large bowl, mix all dry ingredients except for the walnuts and chocolate chips.
In a separate bowl, mix all wet ingredients.
3.Add wet ingredients to drys & mix until well combined. Fold in walnuts and chocolate chips.
4.Drop tablespoons of mixture 5cm apart onto baking trays. Bake cookies for 18 minutes.
