SNOWBALL CAKES

2 oz butter
1 sm cup sugar
2 eggs
2 dess cocoa
1 level tsp bicarb
2 dess treacle or golden syrup
small cup milk
1.5 cups SR

  1. Cream butter and sugar, add eggs & syrup, flour & cocoa. Add bicarb dissolved in milk to make a soft mix with not too much flour.
  2. Half fill patties and cook for 10 min at 400 degree F.
  3. Roll in choc icing then coconut and fill with whipped cream.

VELVET SPICE CAKE

2  1/4 cups plain flour
1 tsp each BP and salt and vanilla
3/4  tsp bicarb
pinch black pepper
1/2 tsp each cinnamon and ground cloves
3/4 cup butter
1  3/4 cups brown sugar
3 eggs
1 cup sour milk

1. Supermix the eggs, sugar, butter & vanilla. When smooth, reduce to low speed and gradually add sour milk. Switch off as soon as all the milk is added. Put into large basin.

2. Sift dry ingredients twice and add to butter mixture, stirring well.

3. Divide mixture into 3 greased 8 inch sandwich tins. Bake in mod oven 30-35 mins. Cool 5 mins in tin before turning out. Ice with mocha butter icing and decorate with walnuts.
