PINEAPPLE SOUFFLE

1 cup fresh pineapple
1/2 cup sugar
2 Tab butter
2 eggs, separated
1  1/2 cups fine soft breadcrumbs
1/4 cup water
well-greased oven dish

1. Supermix pineapple, then turn into bowl, cover with sugar & stand overnight.
2. Turn into small saucepan, add water: bring to boil then simmer 15 minutes.
3. Measure – there should be a cupful. Add butter.
4. Supermix crumbs. Add pineapple to crumbs & yolks and supermix til smooth.
5. Beat egg whites in large bowl until stiff. Gently stir in pineapple.
6. Put into oven dish and bake in moderate oven 40-45 minutes.

LEMON CRUMB PIE

2 cups breadcrumbs, 2 eggs, 4 Tab sugar, 1 lemon,  3 Tab butter, jam,
2 cups hot milk, 3 Tab coconut, 2 dessp castor sugar.

1. Separate eggs. Supermix crumbs, place in bowl & pour hot milk over.
2. Place egg yolks, sugar, lemon rind & strained l/juice into Supermix on high speed until custardy. Pour into bowl of breadcrumbs. Add coconut and beat well with beaters.
3. Bake in moderate oven 35-40 minutes.
4. Spread with jam. Beat egg whites stiff, fold in sugar then arrange in peaks on top of bowl.
5. Put back in oven to brown. Serve hot or cold.
