WHEAT & GLUTEN FREE CHOCOLATE CAKE

* 1/2 cup oil (OR 1/4 cup oil and 1/4 cup apple sauce)
* 1/2 cup water
* 1 3/4 cups Simple Baking Mix
* 3 eggs
* 1/2 cup sugar
* 1/4 cup cocoa

Preheat the oven to 180°C. Grease and line a 20cm round cake tin with baking paper. Place the oil (or oil and apple sauce), eggs and water into a large bowl.
Whisk until combined. Stir in remaining ingredients.
Pour the batter into the cake tin and bake at 180°C for 30-35 minutes (or 40-45 minutes when using oil/apple sauce recipe) or until the cake is cooked.
Ice with chocolate icing if desired.
