BAKED CHEESE AND TOMATO PIE

250g tomatoes, skinned
small onion, grated
60g grated cheese
s/p, cayenne pepper and mustard
2 Tab breadcrumbs
15g butter

  1. In a greased pie dish, place layers of sliced tomatoes, onion and cheese, seasoning each layer well.
  2. Sprinkle a thin layer of breadcrumbs on top and dot with butter.
  3. MW 2 mins., turn, repeat x3 (total 6 mins). Serve.

SAVOURY BREAD & BUTTER CHEESE PUDDING

slices of thin bread and butter
90g grated cheese
s/p and mustard
1 egg
1c milk

  1. Grease a 1/2 litre pie dish.
  2. Arrange in alternate layers, bread and butter, cheese and seasoning.
  3. Beat the egg, pour in the milk and beat well.
  4. Pour over the bread and butter. Leave to stand for 30 mins.
  5. MW 3 mins, turn, repeat x3 (total 12 mins).
  6. Garnish with slices of tomato and parsely.
