CINNAMON MUFFINS

  1. Sift together: 1 cup flour and 1.5 tsp BP into a large bowl.
  2. Supermix:  1 egg, 1/2 cup milk, 1/4 cup melted shortening, 1.5 tsp cinnamon, 1/4 tsp salt,
    3/4 cup brown sugar – until smooth.  Add  1/2 cup raisins and mix again.
  3. Pour this over dry ingredients, stir slightly, turn onto greased muffin trays.
  4. Bake 15-20 mins

SPONGE SANDWICH

4 eggs
3/4 cup corn flour
1/2 tsp carb soda
3/4 cup sugar
3 tsp plain flour
1 tsp cream of tartar

Separate egg yolks, beat whites and sugar till you can make peaks with athe beater that don’t collapse, but stand up firmly then it is ready to add beaten yolks only continue beating till the yellow colour is evenly distributed thru the whites. Add flour which has been sifted 3 times together with plain flour and rising – fold in carefully. Pour into sandwich tins  bake 25 min in a cool to moderate oven. Fill with jam or use them separately with jam and cream on top.
