DARK FRUIT CAKE

375g flour
6 oz butter
1/2 cup sugar
250g each of sultanas & raisins
1 tsp bicarb dissolved in wineglass of milk
1 dess treacle
a little lemon peel
nutmeg & cinnamon
3 eggs
essence to taste

Beat the butter, sugar & treacle well together.
Mix flour, fruit & spices together and add to mixture.
Add the eggs, bicarb & milk.
Bake in a mod oven for 2 hours.

FOUR O’CLOCK FRUIT CAKE

6 oz flour
1.25 oz cocoa
4 oz butter
3 oz sugar
2 oz each of currants, sultanas & lemon peel
2 eggs
1 tsp BP
milk

Cream b&s, add eggs one at a time.
Sift flour with cocoa, rising & dry fruit then add to mixture.
Use as much milk as required.

Bake in mod hot oven for 45-50 mins.
