ROCK CAKES

250g flour
1 tsp BP
pinch salt
4 oz each of butter, sugar & currants
2 oz chopped orange peel
1 oz gr almonds
2 eggs, beaten

Sift first 3 ingredients, rub in butter, add sugar , currants, peel & almonds.
Stir eggs into drys, beating all well together.

Drop spoonfuls of the mixture onto a greased baking sheet.
Bake in  a hot oven, about 205 degrees C, until nicely browned.

SPICED APPLE ‘CAKE’ (intriguing?)

5 Tab flour
3 Tab cornflour
2 Tab sugar
2 tsp gr cinnamon
1 tsp BP
125g butter, melted
milk
stewed apple

Mix dry ingredients tog and add butter.
Then add enough milk to make a paste that will roll out easily:  cover a baking tin with half.

Cover the paste with stewed apples, then place remaining paste on top.
Bake for half an hour in a mod oven.
