Pork with Apricot Glaze

Serves 4
500 g pork fillet
60 g butter
1 onion sliced
2 tsp curry powder
2 tsp ginger grated
2 Tab apricot jam
2 Tab light soy sauce
1 Tab lemon juice
- Melt butter in pan.
- Add onion, curry, ginger, jam, soy sauce and lemon juice. Stir over low heat until jam is melted.
- Place pork in greased shallow ovenproof dish in single layer. Pour sauce over.
- Bake uncovered at 180C for approximately 25 minutes or until pork is tender.
Notes
Serve with steamed rice and broccoli. I make the same quantity of sauce even if cooking for two, as it’s delicious soaked up with the rice.
Another person char-grilled and poured sauce over.
Good for entertaining too.
Watch the sauce doesn’t dry up.
