BLOWAWAY SPICED SPONGE

3 eggs
1 tsp golden syrup
1/2 c arrowroot
1/2 tsp  bicarb
1 tsp cocoa
1 c white sugar
1 Tab flour
1 tsp cr of tartar
2 tsp ginger
1.2 tsp cinn
2 greased sandwich tins

Beat together the eggs & sugar for 5 mins. Add gs and beat for 10 mins.
Sift thoroughly 3 times, the flour, arrowroot, cr tartar, bicarb and spices.
Stir well into the creamed mixture. Divide, and bake in sandwich tins for 10 mins. Do not open the oven door until the sponge is cooked.

Omit spices if a plain sponge is required.

WHOLESOME APPLE FRUIT CAKE

125g butter
185g sugar
2 Tab milk
1 c cold apple pulp
310g SR
juice 1 lemon
3 eggs, beaten
1/4 tsp bicarb*   why this with pulp?
375g sultanas
60g peel

Cream butter with the l/juice, then add sugar, then eggs, then milk.
Mix bicarb with apple pulp and add, then flour and fruit.
Bake 1 to 1.5 hours, according to depth of cake tin used.
