WHOLEMEAL DATE LOAF

2c wholemeal SR
1/2t salt
1 sm tsp cinnamon
1 T butter
3/4c sugar
1c chopped dates
1 egg
1c milk

Place drys in bowl , rub in butter then add sugar & dates.
Beat egg well and add to milk – pour onto dry ingredients and mix thoroughly to a firm consistency.
Bake in mod oven 1 hour in a loaf tin, or divide mixture and bake in sm tins for 3/4 hr.

WHOLEMEAL COCONUT GINGER GEMS

1/2 c butter
1 breakfast cup each of finest wholemeal flour & coconut
1 tsp gr ginger
1/2 t cinnamon
1/4 c tepid milk
2 eggs
1/4c sugar
1/2c gs
1/2t bicarb
heated up gem rings

Rub b into flour, add all drys except bicarb. Dissolve bicarb in milk. Add the other ingredients then
milk mixt. last.
Have gem rings hot, so butter boils when you grease them. Cook a few minutes.
