SPICED ZUCCHINI CAKE

185g butter, melted
1 .5 cups sugar
1 .5 cups grated zucchini
1 tsp cinnamon
2 eggs, lightly beaten
1 .5 cups plain flour
1 tsp BP
1 cup walnut pieces, chopped

1.Melt butter in a saucepan. Put into bowl and add sugar, zucchini, cinnamon & eggs.

2.Sift the flour and BP together and fold into zucchini mixture, then add walnuts.

3.Spoon into a well buttered and paper-lined 20cm ring pan. Bake at 180 degrees C for 1 hour.
Cool on a wire cake rack.
