Raw Rainbow Carrot and Nectarine Salad

Serves 4

Ingredients
1 bunch rainbow dutch carrots, sliced into discs
2 cm cube ginger, diced fine
1 clove garlic, minced
1 pinch fennel seed
1 lime, zest
½ tsp honey
5 thyme sprigs
1 fennel bulb, diced
1 nectarine, diced
½ cup almonds, chopped

Make the salad dressing by mixing garlic, ginger, thyme, lime rind and juice, fennel seeds and honey in a bowl.

Then add sliced carrots, fennel, nectarine and almonds and toss with dressing, serve and enjoy.
