LEMON AND HONEY TARTS
1 lemon, juiced & rind
1 egg, well-beaten
1 Tab honey
45g butter
60g sugar
1 heaped tsp cornflour
250g short pastry
Melt butter in a saucepan, stir in cornflour, add strained juice and grated rind of lemon, honey & sugar and stir over mod heat for 4 mins.
Remove from heat and add egg. Stir over gentle heat in a double saucepan until it thickens. Leave until cold.
Fill pastry-lined patty tins with cooled mixture and bake in a hot oven.
