ONE-EGG LOAF FRUIT CAKE

1 egg
1c each of SR & plain flour
500g pkt mixed fruit
155g butter
1c each of sugar & water
2 tsp spice
1/2 tsp bicarb

Boil fruit, b&s, spice & water for 3 mins. Allow to cool.
Beat egg and add. Sift flours & bicarb and add.
Line tin with paper, hollow out middle slightly and bake in mod oven 1  1/4-1  1/2 hours.
