XMAS TRIFLE TREAT

1 jam sponge roll or pkt rollettes
1/4 cup sweet sherry
1/2t vanilla essence
2c thickened cream
1 sachet jelly crystals
300g can drained peach slices
long life or fresh custard
fresh strawberries
1/4c toasted flaked almonds or chopped walnuts

Prepare jelly as per pckt directions, add V to cream and whip.
Slice jam sponge into 2 cm slices, arrange layer onto bottom of dish, sprinkle with sherry.
Top with jelly and half the cream.

Add a second layer of cake, place peach slices on top. Pour custard over and chill.
Decorate with remaining cream, fresh fruit and nuts. Serve chilled.

NOTE:  I was going to adapt this to mango trifle, using custard recipe in other trifle recipe
