COLD TEA CAKE

1 cup strong cold tea
125g each of butter & sugar
250g each of  plain flour  & mixed fruit
1 tsp spice
1 tsp bicarb

Put tea, butter, sugar, fruit and spice into saucepan and boil 3 mins. Allow to cool.
Sift in flour and bicarb. Mix well and bake in lined tin in mod oven for 1  1/4  hours.

SWEET CHEESE CAKE

short pastry
60g cream cheese – crumbled
1 tsp vanilla essence
4 eggs – separated.
125g each of castor sugar and butter
60g sultanas
pinch salt
milk

Line a large pie plate with pastry, ornament the edges. Prick all over bottom with a fork.
Beat b&s to a cream. Stir in the cheese, beaten egg yolks (reserving enough to glaze top), v, salt and sultanas.

Beat egg whites stiff and fold into mixture. Pour into the pastry shell, brush with yolk and a little milk.

Put into a hot oven at first, reduce the heat and bake til custard is set and pastry is pale brown.
