ORANGE CREAM CUPCAKES

2 oranges – juiced & finely grated
1 cup sugar
2 cups flour
1 tsp cr of tartar
2 eggs, beaten
1/2 cup each of  butter & milk
1/2 tsp bicarb

Sift flour & risings together.
Cream b&s, add eggs, milk & oj. Then add orange rind & sifted flour.
Put into patty pans, bake a light brown.
When cold, take tops off, add whipped cream & replace tops.

ORANGE FOAM DESSERT

2 cups hot water
3/4 cup sugar
2 Tab cornflour, mixed with cold water
juice of 2 oranges
1/2 lemon
3 egg whites
CUSTARD:
1 pint milk
2 Tab sugar
1/2 tsp vanilla
3 egg yolks

1.Boil water in saucepan, add sugar when boiling, then the cornstarch: stir and cook 5 mins. Cool.

2.Add juice, whip egg whites stiffly (using knife on a plate) and pour over cornstarch mixture when cool. Beat until light.

3.Make a soft custard from egg yolks. Pour over orange foam. Delicious!
