Coconut & Citrus Christmas Cake

Ingredients
150g unsalted butter
3/4 cup caster sugar
1 tsp vanilla extract
5 eggs
1 lemon, zest and juice
1 orange, zest and juice
3/4 cup Coconut Meal
500g MIxed Fruit
80g Pistachios

Apple & Hazelnut Tart

Serves 6

Ingredients
1 2/3 cups gluten-free plain flour
1 1/2 cups hazelnut meal
2 tbs caster sugar
1 tsp vanilla extract
1 cup thickened cream
1 tbs cornflour
3/4 cup sugar
5 eggs
125g cold butter
2 sliced apples

1. Preheat oven to 200°c. Grease 23cm flan pan.

2.  Process GF flour, 1/2 cup hazelnut meal, caster sugar and butter in a food processor until resembles breadcrumbs. Add 1 egg and process to form a dough. Wrap in plastic. Chill for 30 minutes.

3.  Roll out pastry. Fit into pan. Prick base. Line with baking paper. Fill with dried beans. Bake for 15 minutes. Remove beans and paper. Bake for 10 minutes. Cool. Reduce oven to 180°c.

3. Beat 4 eggs, 3/4 cup sugar and vanilla until thick. Stir in cream, 1 tbs GF cornflour and 1/2 cup hazelnut meal. Pour into pastry. Layer
