REFRIGERATOR PASTRY (uncooked)

3 c cereal (rice bubbles, cornflakes, weeties)
1/4 c sugar
grated rind of lemon or orange
125g shortening, melted

Crush cereal finely, place in bowl with sugar, rind & shortening. Mix well.
Press mixture into a 20cm greased pie plate and refrigerate several hours until quite firm.

FOR CHOCOLATE PASTRY:  omit lemon or orange rind and add 2 level Tabs cocoa and 1 Tab hot milk

CORNFLAKE COFFEE CAKE

2 Tab butter
1/2 c sugar
1 egg
1.5c SR
2/3 c milk
1/2 tsp nutmeg
pinch salt

Cream b&s. Add egg, beat til light. Mix flour, nutmeg & salt and add alternately with milk.

TOPPING
Melt 1 Tab butter, then add 1/4c sugar, 2 tsp cinn, 3 Tab slightly crushed cornflakes.
Sprinkle over mixture. Bake 1/2 hour in mod oven.
