Serve with honeyed salmon or a chicken sandwich – serves 4
Ingredients
1 medium sized avocado, peeled, seeded and diced
150g Victorian Strawberries, hulled & diced
1 small Spanish onion, diced
1 small Lebanese cucumber, peeled, seeded & diced
1 Tab chopped fresh coriander leaves
1 Tab olive oil
1 Tab lime juice
1/8 teaspoon salt
1/4 teaspoon freshly ground black pepper
Combine all salsa ingredients and serve

2 large avocados, diced
1 large tomato, diced
1/4 cup finely chopped red onion
3-4 Tab chopped coriander
1.Into a bowl place the avo (reserving the seed), add remaining ingredients, season and gently mix to combine.
2.Place the seed back into the dip to help prevent discolouration. Cover with cling wrap and refrigerate until needed.
3.When ready to serve, surround the guac with your favourite chips or crackers!
