CRISPS SUZETTE

Makes 8

1 cup milk
3 eggs
1/3 cup sugar
1/4 cup butter, melted
1/4 tsp salt
1 piece lemon rind
1/4 cup orange juice
1  3/4 cups flour

Supermix all ingredients except last. Put in basin, add flour.
Bake one at a time.

WHOLEMEAL APPLE CHARLOTTE

185g wholemeal SR
125g SR
1/4 tsp salt
185g shortening
1/2 tsp grated lemon rind plus 1 tsp extra
1-2 Tab milk
2 Tab honey
3 Tab sugar
2.5-3 cups dry apple pulp (unsweetened)
lemon icing
chopped walnuts or cinnamon

1.Mix flours & salt. Rub in shortening, add rind. Then add milk & knead lightly.

2.Cut off 2/3 to line tin. Roll both pieces 1/4″ thick. Line 23cm sandwich tin with larger portion. Brush with some milk.

3.Mix honey, sugar and other lemon rind with apple. Fill tin with this.
Cover with rest of pastry. Trim & seal by pinching edges. Brush with water or egg white.

4.Cook in hot oven 205 degrees C for 35-40 mins

5.Ice when cool and sprinkle with nuts or cinnamon.
