APPLE AND ALMOND TART

10 oval digestive biscuits
2 oz shelled (unblanched) almonds
2 large apples
2 oz each of butter, copha & sugar
sm.piece lemon rind
1 cup water

Melt butter & copha slowly.
Supermix biscuits & almonds together until crumbed. Stir in butter and line a 8″ tart tray.

Quarter (don’t peel) & Supermix apples with sugar, rind and water.
Cook 5 mins., cool then pour into tart shell and chill. Serve with whipped cream.

TEA CAKE

1 Tab butter
1/2 cup sugar
1 cup SR
1 Tab cornflour
2 eggs, separated
1/2 cup milk
piece lemon rind
TOPPING:
a little butter
cinnamon & sugar combined

Supermix butter, sugar, egg yolks & rind – and gradually add milk.
Pour into a basin and stir in sifted flours and salt.
Beat egg whites stiff and fold in.
Bake at 475 degrees F (electric) 15 mins.
While hot, rub in a little butter over top and sprinkle with cinnamon/sugar mixture.
Split, butter and serve hot.
