ROCK CAKES

250g flour
1 tsp BP
pinch salt
4 oz each of butter, sugar & currants
2 oz chopped orange peel
1 oz gr almonds
2 eggs, beaten

Sift first 3 ingredients, rub in butter, add sugar , currants, peel & almonds.
Stir eggs into drys, beating all well together.

Drop spoonfuls of the mixture onto a greased baking sheet.
Bake in  a hot oven, about 205 degrees C, until nicely browned.

HONEY STRAWBERRY BUTTER

Makes 2 cups

Ingredients:
½ cup butter; softened
½ cup honey
1 pint fresh strawberries; sliced
grated peel of 1 orange

Put all ingredients in a blender on medium speed and beat until smooth.
Serve on pancakes and waffles.
