APPLE PANCAKES
Makes pancakes into a really substantial dessert. The nuts give a change in flavour and texture.
Servings: 8
750g dessert apples
1 orange
30g butter
brown sugar, to taste
28 g almonds, blanched & chopped
147 g pancake batter
sour cream
1 level tsp ground cinnamon
1T butter, melted
2 level Tab icing sugar
Step 1
Peel, core & slice apples thinly & put in saucepan. Grate rind of orange and reserve, squeeze juice & add to apples. Cover and cook gently until soft, shaking pan occasionally to prevent sticking.
Beat with a wooden spoon to make a smooth puree. Remove from heat, stir in sugar & set aside.
Step 2
Make pancake batter and stir in reserved grated orange rind & chopped almonds and cook.
Keep pancakes warm.
Step 3
Reheat apple puree then stir in sour cream & cinnamon. Spread pancakes with apple mixture and fold into four. Arrange, overlapping, in a heated fireproof dish, brush with melted butter & sprinkle with sifted icing sugar. Place under a hot grill for 3-5 mins to glaze. Serve at once.
