LEMON SAGO

1 c sago
1 Tab treacle or golden syrup
1 c sugar
4 cups water
juice of 2 lemons

Put all ingredients into a saucepan and bring to boil, stirring occasionally to keep free from lumps.
Keep boiling til it is clear and thick. Pour into wetted mould to cool.

DATE SAGO PUDDING

3 Tab sago
625 ml milk
1/2 tsp bicarb
375g dates, stoned *
walnut-sized butter

Let sago stand all night in milk. Next day add dates *** , bicarb & butter.
Cover basin with greaseproof paper, stand in a saucepan of water, and boil 3-4 hrs.**
Serve with cream.

*    Try with other dried or stewed fruits, coconut, figs, cacao etc.
