KITTY (fruit) PUDDING

1.5 cups flour
1 cup fruit – try dates, peaches, nuts, figs
1 cup milk
2 Tab treacle
ginger
2 Tab shortening
1 tsp bicarb
2 Tab sugar
2 Tab breadcrumbs
spice

Dissolve bicarb in the milk and mix all ingredients together. Steam for 3 hours.

VERMONT GINGER BREAD (has raisins)

1 cup each of sugar, chopped raisins & sour milk
2 Tab golden syrup
5 oz butter
1/2 tsp salt
1 dess cinnamon
2 dess ginger
1 tsp spice
2 eggs, well beaten
2 good cups flour
1 bare tsp bicarb

Mix the sugar, treacle, butter, salt & spices.
Then add the eggs & milk, and add bicarb with the flour.

Next add the raisins and beat for 2 mins.
Bake in a shallow tin for 40-60 mins according to thickness.
