SWEET AND SOUR CHOPS

6 neck chops
s/p
1 carrot
1 level Tab sugar
1 cup water or stock
3 level Tabs plain flour, seasoned
1 sliced onion
1 level Tab chopped mint
2 Tab vinegar

Prepare chops, toss in seasoned flour, place in greased casserole & sprinkle with remainder of flour. Brown onion, slice carrot and add to chops. Add mint, sugar, vinegar & stock.

Cover and cook in moderate oven 1.5-1.75 hours.

PIQUANT CHOPS

6 neck chops (thick like osso bucco)
1/2 clove garlic, chopped
1 level dess each of brown sugar and chopped green capsicum
2 Tab Worcestershire sauce
1 level tsp each of mustard, curry pdr
1/4 cup stock or water
1 small onion
2 Tab vinegar
250g tin tomato soup

Trim chops, put into casserole and cover with rest of ingredients. Stand 3 hours.
Cook in moderate oven 1.5-2 hours. If necessary, thicken the gravy.
