HI FIBRE APPLE SLICE

200g butter
1 cup brown sugar
2 eggs
2.5 cups wholemeal SR
1/2 cup rolled oats
1/4 cup wheatgerm
4 Granny Smith apples, peeled & chopped
cinnamon
milk

Cream butter & sugar then add eggs gradually, continuing to beat.
Mix in the flour, oats & wheatgerm.
Press half the mixture into a slab or lamington tin. Place apples on pastry base and sprinkle with cinnamon.

To remaining mixture add sufficient milk to bring to a spreading consistency.
Spread over the apple and sprinkle with more cinnamon.

Bake in mod oven for 30 mins or until golden brown. Slice & serve hot as a dessert or cold.
Freezes very well.

HEALTH BARS

1 egg
2 Tab raw sugar
1/2 cup wheatgerm
1/2 cup coconut
1/2 cup chopped dates
1 cup wholemeal or plain SR flour
1 cup cornflakes
3/4 cup mixed fruit
2 Tab honey
2 oz butter

Beat egg & sugar together, add next 6 ingredients.
Melt honey & butter together then add to the mixture.
Press in shallow tray and cook in moderate oven 15-20 mins.
Cut when cold.
