A quantity of stewed apples cold and well drained, cooked day before if possible.
8 ozs SR flour
4 oz butter (marg.)
2 tblespoons sugar
1 egg
2 tblespoons cold water
Cream butter and sugar add egg beaten, water, flour. Mix into a firm dough. Some times I find the dough too soft to handle especially in hot weather so I add corn flour to stiffen it up.
Line a tin and put on the oven slide leave enough dough to cover top, spread thickly with stewed apples. Just before putting into oven brush over with cold water an sprinkle with sugar bake 400 degrees for 20 min.

1 Tbspoon butter 1/2 cup sugar 1/2 cup milk
1 egg cup SR Flour
Cream butter and sugar add egg, then milk, and flour. Grease a basin put 2 tspoons jam in bottom, put in pudding mixture cover top with papper, greased, or a lid that fits closely.
Place basin in saucepan of boiling water, that comes about 1/4 way up basin cook for 3/4 hr taking care water doesn’t get into the top of basin.
Variations take out 1 tbspoon of flour add 1 tbspoon of cocoa and vanilla essence
Add 1/2 cup of currants and lemon essence.
