HONEY SCONES

250g plain flour
1 large pinch salt
1/2 tsp each of bicarb and cr of tartar
1.5 oz butter
1 tsp honey
3 Tab milk plus extra

Sift drys together, then rub in butter finely.
Beat honey with milk and mix into crumble mixture.
Add enough extra milk to make a very soft dough  still able to be handled.

Roll out lightly on a well-floured board and cut into small rounds.
Bake on a greased tray in a very hot oven for about 10-12 mins. When half done, brush over with milk.

Eat hot or cold but on the same day.

PRUNE LOAF

Bread dough for 1 loaf
stewed prunes – remove stones (don’t discard)
2 Tab butter
2/3 cup sugar
1/4 cup sour cream
1 Tab flour
cinnamon

1.  Work the butter and half of the sugar into the bread dough.
Let it rise until quite light., then roll it out to fit a 10″ pan.

2.  Mix together the rest of the sugar, the sour cream & flour, and spread over the dough.
Spread a layer of prunes over the dough, then the stones (??)

3.  Sprinkle with cinnamon and bake in a mod oven for half an hour.
