GUACAMOLE

serves 8

guacamole

2 large avocados, diced
1 large tomato, diced
1/4 cup finely chopped red onion
3-4 Tab chopped coriander

1.Into a bowl place the avo (reserving the seed), add remaining ingredients, season and gently mix to combine.

2.Place the seed back into the dip to help prevent discolouration. Cover with cling wrap and refrigerate until needed.

3.When ready to serve, surround the guac with your favourite chips or crackers!

 

 

MALT LOAF

Makes one 750g loaf)

2 cups wholemeal SR flour
125g mixed dried fruit
1/2 pint (236.58 ml or 1 cup) milk
1 Tab treacle
2 Tab malt extract or honey
1 cup wheatgerm
pinch salt
1/4 cup raw sugar

Add fruit to dry ingredients. In saucepan gently warm liquids on a low heat to blend them.
Make a well in the dry bowl and add liquid. Stir well, beat 1 minute.
Put in greased loaf tin in a moderate oven 180 degrees C for 1  1/4 hours.
