COCOA CAKE

125g butter
250g each of SR & sugar
6 Tab milk
3 eggs, beaten well
4 heaped tsp cocoa

Cream b&s, add eggs, milk, then flour & cocoa.
Cook in sandwich tins in mod oven for 20 mins.

FILLING
2 Tab icing sugar, 1 Tab butter, 1 tsp cocoa, vanilla essence.
Cream b&s, add rest.

ICING
2 Tab icing sugar, 1 small tsp boiling water or fruit juice, 1 tsp cocoa.
Mix together, spread over cake, decorate with chopped nuts.

CINNAMON SANDWICH CAKE with date filling

2 small cups SR
1/4 c sugar
2 tsp vanilla essence
pinch salt
1 tsp? cr of tartar
1/2 tsp bicarb? dissolved in hot water
125g butter
3 eggs
2 tsp cinnamon
a little extra rising (see guesses of bicarb and cr tartar)
1/4 c milk

Cream b&s, add eggs separately then essence & cinnamon.
Sift flour, salt and cr tartar and add. Then add milk & dissolved bicarb to mixt.
Pour into greased tins, cook in mod oven 20 mins.

FILLING
Chop 12 dates finely, add a piece of butter (size of walnut), vanilla essence and 1/4 c milk.
Put in saucepan and boil, stirring all the time. When cold, join cakes with it. Ice cake with white icing and chopped almonds.
