WALNUT CAKE

250g flour
185g each of sugar & butter
125g each of currants (or goji?) & raisins
90g (3 oz) walnuts
1 Tab BP
60g candied peel
3 eggs, well-beaten
a little milk
2 cake tins

Cream b&s, add eggs then drys with a little milk. Beat well 5 mins.
Put into cake tins, place walnuts on top and bake in mod oven 1 hour.

THREE MINUTE SPONGE

1 large cup pl flour
3/4 c sugar
3 Tab melted butter
1 tsp cr tartar
pinch salt
3 eggs
3 Tab milk
1/2 tsp bicarb

Put into a basin the flour & salt, and sugar, then break the eggs in, add butter, milk, and mix well for 3 mins. Add cr tartar & bicarb, and cook in sandwich tins or cake tin in mod oven 30 mins.
