2 c SR
2 Tab each of sugar & butter
2 eggs
jam & coconut

Make a dough and roll out like pastry. Spread with jam (thinly) and roll up like roly-poly.
Cut into rounds 13mm (1/2″) thick, roll in coconut and bake in quick oven.

ROUND RUSKS

90g butter or lard
2c flour
2 tsp BP
2 eggs
1 tsp sugar
pinch salt
milk

Beat eggs & butter together with sugar & salt. Add flour and enough milk to make a scone mixture.
Cut into rounds and bake in a brisk oven. When cooked, cut open with a sharp knife, put back into oven and bake a nice brown.
