WHEATMEAL APPLE FRITTERS – batter using cr of tartar

1c wheatmeal
1/2c plain flour
1/2t bicarb
1 sm tsp cr of tartar
1T sugar
1 egg , well-beaten
milk
apples – peeled & cored

Mix drys together, add egg & enough milk to make stiff batter.
Slice apples. Dip in batter, fry in deep fat.
Before serving, dust with icing sugar.

WALNUT & WHOLEMEAL BRITTLES

2c wholemeal (coarse)
1c fine gr wholemeal
1c sugar
2T gs
1c dess coconut
1/2c chopped walnuts
1/2c good dripping
3T water
1t bicarb

Mix drys together.
Heat tog the dripping, syrup & water. Bring to boil then quickly add bicarb.
Mix  with drys, pinch into small pieces. Put onto cold, floured tray in a warm oven.
NOTE:  They burn easily so low oven heat..  Cook 15 mins.
