BANANA CRUNCH CAKE

CAKE:
125g butter
2 eggs
1tsp vanilla
2 1/4c SR
1c caster sugar
lemon
1c bananas, mashed
1/4 tsp baking soda
6 Tab water

Cream together butter and sugar, gradually add eggs beating well.
Add bananas and vanilla.
Sift flour and baking soda together and add to creamed mixture with water.
Pour into a lined greased 23cm/9 inch square cake tin.
Place topping over cake and bake in moderate oven 40-50 minutes.
Alternately, try MW for 15 minutes at Med 250 degrees.

TOPPING:
60g soft butter
2 Tab sugar
2 Tab chopped walnuts
2 Tab SR
1 tsp cinnamon

Prepare topping by rubbing butter into flour then rest, and mix well.

NOTES: Topping is nice.
