WALNUT CAKE

250g flour
185g each of sugar & butter
125g each of currants (or goji?) & raisins
90g (3 oz) walnuts
1 Tab BP
60g candied peel
3 eggs, well-beaten
a little milk
2 cake tins

Cream b&s, add eggs then drys with a little milk. Beat well 5 mins.
Put into cake tins, place walnuts on top and bake in mod oven 1 hour.

BAKE-WELL TARTS

Delicious

Make 250g good short pastry and put into patty tins. Then make:

4 Tab each of currants & sugar
sm piece candied peel
2 Tab apricot jam
TOPPING:
2 oz butter or marg
2 oz sugar
1 egg
2 oz coconut

Put a little of the fruit mixture into each patty tin.

TOPPING:
Beat together butter, sugar & egg. Stir in coconut and pile on tarts.
Bake in mod oven 20 mins.
