SPICED CHICKEN DRUMETTES (DVBC)



Ingredients
:

I kg chicken drumettes

2 tablespoons peanut oil

2 tablespoons soy sauce

2 tablespoons tomato sauce

1/4 cup honey

1 small clove of garlic, crushed

1/4 teaspoon fivespice powder

1/4 teaspoon salt

1. Mix ingredients in large bowl; add drumettes; stir to coat.
2. Place drumettes in flat shallow dish in one layer.

3. Preheat oven to 180 degrees ( not fan forced) – cook for 45 minutes, turning them
once. If they become too brown, reduce heat. If too dry add 1 tablespoon of water.

4. When ready, the outside should be sticky and caramelised and the inside soft
( chicken will almost fall away from bone)

HONEY LEMON MUFFINS

1c instant non-fat milk powder
1c flour
4 tsp BP
1/2t salt
1/2c chopped crystallised lemon peel
1 egg
1/2c honey
1/2c hot water
3 Tab melted butter

Preheat oven to 180 degrees FF, prepare pans. Sift dried milk, flour, BP and salt. |
Add lemon peel. Measure honey into small bowl then add hot water: mix to melt.

Beat egg, add honey & water and butter. Stir into drys until just combined.
Spoon into pans and bake 10 mins or until golden.
