SOUTHPORT PUDDING

3 thick slices bread, 2 large apples,
candied peel, 2 oz raisins, 2 Tab SR, 2 small tsp BP
2 eggs, 3/4 cup brown sugar, 2 Tab milk, 3 oz margarine,  2 oz

Supermix bread into crumbs and put into a large bowl.
Quarter the apples (don’t peel), Supermix them, then tip them into the crumb mixture.
Add peel, raisins, flour and BP to bowl.
Supermix eggs, sugar, milk and margarine then add to bowl and mix well.
Put in buttered pudding basin, cover and steam for 2 hours.

APPLE PAN DOWDY (apple pudding using blender to mix)

  1. Core and quarter 2 apples
    2. Combine 1/4 cup water, 1/4 sugar, 1 tsp cinnamon in Supermix with apples until smooth. Put in a basin.
    3.  Supermix  2 eggs, 1/2 cup milk, 3/4 cup sugar and 3 oz butter until custardy.
    4.  Pour into large basin and add 1  3/4 cups SR flour.
    5.  Pour batter into 8 inch greased cake tin and pour apple-cinnamon mix on top.
    6.  Bake in moderate oven 40-45 minutes. Serve hot or cold as a pudding.
