WHEAT & GLUTEN FREE LEMON & LIME SLICE

* Packet of Simple Lemon & Lime Shortbread – crushed
* 250gm bar of chocolate (check with manufacturer that it is wheat & gluten free)
* 2 tbsp Golden Syrup
* 1 oz butter

Melt butter, golden syrup and 2/3 of chocolate together in a bowl, stir to mix together. Add crushed biscuits and mix in. Spread mixture onto a flat baking tray (about 30cm x 20cm)
Melt remaining chocolate and spread on top of biscuit mixture. Drizzle with golden syrup if desired or put a layer of syrup between biscuit mixture and chocolate layer. Put in fridge to set for about 1 hour. Cut into equal sized slices and enjoy!

Makes 12-16 slices.

WHEAT & GLUTEN FREE COCONUT BISCUITS

* 125g butter, softened
* 1 egg
* 1 teaspoon vanilla essence
* 1 3/4 cups Simple Baking Mix – product in pouch only
* 1 cup coconut

Beat butter, egg and vanilla essence until well combined. Add Baking Mix and coconut to a firm dough. Roll tablespoonsful of mixture into balls. Place on a greased oven tray and press lightly with the palm of your hand. Bake at 180°C for 12-15 minutes. Cool on wire racks.


If you would like to remove the dairy content replace the butter with vegetable oil
