GINGER SAUCE

1 small piece ginger root
1/2 cup water
juice of 1 lemon
2 Tab sugar – levelled and sifted
1 piece lemon rind
1 glass white wine or 1 Tab brandy

Grate ginger and mix with sugar, water & rind and simmer gently for 10 mins.
Add juice and wine;  strain and serve.
